Apple wood produces a mild yet delicate smoke with a hint of sweetness to add a very distinctive flavour to meats grilled or smoked with it.  Apple is great for pork, poultry, and lighter items. It also goes well with beef when mixed with Hickory or Pecan.

Chunks can be used in dozens of different types of grills to add that wonderful wood smoke flavour to your dishes. Chunks are great to use with charcoal for added flavor, but for best results and completely natural cooking, use only 100% wood chunks.

 

Light charcoal using your preferred method. 

Several minutes before cooking, add 3-5 dry chunks for a standard sized grill (add more chunks if using a larger smoker).

Continue to add chunks every 20-30 minutes during the cooking process to infuse that great smoke flavour into your cooking. 

 

 Stack dry cooking chunks in a pyramid on top of a solid fire starter (leave the rough edge exposed) then light the fire starter. 

Let the chunks burn for approximately 15 to 20 minutes with the lid on and all vents open.

Wait for flames to subside, then open the lid and the spread the chunks out evenly. 

Place food on the grill and close the lid again.
